Here in the Northeast we’ve already been blasted with a snow storm and cold temperatures, so I can’t imagine anything better when stuck inside than a warm bowl of tasty and healthy soup like these wonderful recipes from Better Homes and Gardens. I hope you will try these and share with us how much you enjoyed or if you have already tried great soup recipes like these.

1. Squash-Quinoa Soup…

Squash and Zucchini are two popular vegetables for fall harvest and are two of my favorite vegetables to use for fall recipes like zucchini bread or roasted squash. I can’t wait to try this healthy Squash-Quinoa Soup recipe that is only 226 calories and contains only 4 grams of fat! It includes chicken, chopped shallots or onions, squash, zucchini, and a few other ingredients. Check out Better Homes and Gardens for the complete recipe!

2. Kale, Lential Chicken Soup…

I’ve read some great things about Kale lately of how healthy and benefical it is for you so I thought this twist on the traditional chicken soup would be an interesting one to try. Did you know that Kale is rich in calcium, vitamin K and C, and contains an anti-cancer property? It is said to best profit from these nutrients you should steam or stir-fry instead of boiling. For this chicken soup recipe, that also includes lentils, onions, and carrots, you may want to boil the other ingredients and throw in the kale after you steam or stir-fry it.

3. Barley-Beef Soup…

I want to try this recipe just because of the cute soup cup in this photo! Well also because it sounds really tasty and great for fall and winter when it gets really chilly outside. With only 170 calories and 4 grams of fat, I think this is a soup recipe I’ll be eating once a week! You can make this in a slow cooker or in a dutch oven, check out the link for more info on the ingredients and cooking details.

4. A Bowl full of Greens…

I love the idea of a bowl full of greens that will fill your body with vitamins and warmth on a cool night in the fall and winter. This is a great recipe for vegetarians or anyone looking for a healthy meal. It includes kale, celery, leeks, zucchini, spinach, parsley, and a few other things. What’s not to love about a soup that contains only 90 calories and 2 grams of fat…eat up readers!

5. Triple Tomato Soup…

You are probably wondering why it’s called Triple Tomato Soup and that’s because it contains three different types of tomato products; a can of whole tomatoes, dried tomatoes, and tomato paste. If you want to add a little crunch to complete this meal why not make a grilled cheese sandwich along with it, just use goat cheese to keep it healthy!
